This is a truly lovely variation on the traditional tomato salsa & goes great with fish (tuna & swordfish works especially well) or chicken. And I really must make a point of making this more often!!! I’ll also make a point of chopping the onions even finer & taming the chilli down a little the next time I attempt to give this to my hugely fussy mother!!!
Mango Salsa
- Mango – 1 peeled & diced
- Spring Onions – 4 finely chopped
- Cucumber – About a 2 inch chunk, diced
- Ginger – About an 1 inch piece, finely chopped
- Coriander – A good handful, chopped
- Chilli – ½ red chilli, chopped & de-seeded
- Lime juice – Juice of 1 lime
This salsa can be made in about 5 minutes and really couldn’t be easier. Simply put all the chopped ingredients into a bowl, give it a quick stir around and pop it into the fridge until ready to serve… Simples 🙂
